SKEWERS
2 Wooden Skewers, soaked in water for 30 minutes prior to use (Optional)
4 Large Black Olives
4 Cherry Tomatoes
1/2 Yellow Pepper, cut into 4 squares
1/4 Red Onion, cut in half and separated into 4 pieces
4 Slices Cucumber, cut in half
4 Cubes Feta Cheese
DRESSING
1/2 Tbsp Extra Virgin Olive Oil
1/4 Lemon, for juice
1/2 Tsp Balsamic Vinegar
Salt and Pepper to taste (Optional)
1. Thread each skewer with 1/2 of skewer ingredients.
2. Place all the dressing ingredients in a small bowl and mix together thoroughly. 3. Pour over the skewers and enjoy!
